{Foreigner in Formosa} Two Local Gems

One of the fun parts of living in a foreign country and of moving to any new location is finding the local gems. There are two particular food favorites that we’ve come across within a block from our apartment, and I’d like to share them with you now.

Dan Bing Breakfast Shop

Dan bing (蛋餅) is a sort of egg pancake that is a favorite in Taiwan. Just down the street from our apartment, there is a hopping breakfast shop that specializes in making delicious dan bing. The pancake part is made of onion, tortilla, and egg, and the filling that Charles and I like most is bacon and cheese. We drizzle a bit of special sauce (a little sweet, a little soy, and a little spicy) on top, and we have a delicious breakfast delicacy. Continue reading “{Foreigner in Formosa} Two Local Gems”

{Segue} Are We There Yet?

Are we there yet? That’s the question I keep asking myself. Are we home? Will we ever be settled? When will the transitioning end?

The End of Summer

After our wedding on June 29, Charles and I spent the next three weeks visiting with family in New Jersey, Virginia, South Carolina, and New York. It was quite the road trip, and we were so blessed to spend time with our loved ones. The summer seemed to go by too fast though, and before we knew it, we were boarding the plane to fly to Taiwan. Though it was bittersweet as always (crying with Mom as Dad led us all in prayer at the airport), I was happy to be traveling with Charles this time. After about 30 hours of travel, groggy and jet-lagged, we unloaded our bags at the guest apartment at Morrison and attempted to rest for the night. Continue reading “{Segue} Are We There Yet?”

Our Beautiful Day

We began with a “first look” for Charles and me at the flowering Butterfly Garden in Liverpool, followed by a thoughtful ceremony at a gorgeous old church in Syracuse, and then a roaring good time of laughter, dancing, and sweet conversation at our reception. Friends and family from across the country drove, flew, and took trains to join us for our special day; Chucky, the family doll and running joke, made several appearances (dressed in her wedding finery, of course); and the Syracuse rain held off just long enough for pictures outside. I saw my mom and dad dance in public for the first time in my life, my flower girl stole the show with her incredible cuteness and personality, and my dad quoted The Princess Bride wedding scene in his message. Our loving families supported us in every way possible, from helping with the rehearsal dinner to making the beautiful decorations and phenomenal (and delicious!) wedding cake. We were surrounded by loved ones, including our dear bridal party of best friends and family. We couldn’t have asked for more. The day was perfect and memorable, full of joy and blessings.
