I’m 30 years old, and I’ve never cooked soup in my life.
Until today.
My father will be proud. I grew up eating all sorts of delicious soups made with love and creative inspiration by my dad. I didn’t like soup when I was younger, but Dad was persistent enough to instill a love of soup in me. Add post-college lunch dates at Panera Bread, and I’m a real soup fan now.
Last night, I got a hankerin’ for creamy delicious potato soup. When I searched for a recipe online, the first one I found was from the Pioneer Woman. I’ve been told about her cooking prowess and her creative blog, so I took time to read through the recipe. Not only did I feel like I was sitting in the kitchen getting cooking tips from an old friend, I also realized I could get ALL of the ingredients for the soup here in Taiwan. Now that’s a winner in my book.
So, I sent my dear husband to the grocery store today, list in hand. When he returned, having gathered all the necessary ingredients, we went to work cooking. He did all the dicing, and I jumped in with the measuring, stirring, and boiling. We make a good team.
The soup was absolutely out-of-this-world, and we have plenty to eat for the rest of the week and even some to freeze. I’ve included a few photos of our process and finished product below, but you should check out the Pioneer Woman’s website for the perfect recipe for potato soup. Make it, and enjoy!
Christel, your dad is so proud. It even looks like you had some crusty bread to go with the soup?
Thanks, Dad! Yep, at the Carrefour grocery store, they usually have loaves of French bread like that. It’s not sweet at all (unlike most Taiwanese breads) and tastes very western. We bought a loaf and enjoyed it very much with our soup.
I love her website, too! She has excellent recipes and I love the way she presents them! The pictures are great and the captions are often very funny!
Glad you found a good one and enjoyed your soup! Great job you guys!
Thanks, Meg! I will definitely read more from her in the future. Sometimes recipes are frustrating because we can’t get the right ingredients here in Taiwan, but it was so fun to make a recipe in which we didn’t have to substitute ingredients. If you like potato soup, definitely try this one.
